Bouche
Bouche is a young Berlin brewery with roots in the creative studios of an artists’ collective, where the project began in 2019 as a relaxed collaboration. A side hustle that quickly grew into something much bigger. What started in a small storage room transformed into a dedicated brewery driven by a deep passion for kombucha and fermented drinks. Today, Bouche operates from a converted warehouse on the edge of Berlin‑Marzahn, where the team focuses on crafting complex flavour profiles and redefining what kombucha can be. Their mission is clear: to set new standards for taste, quality, and the brewing process itself.
Every bottle of Bouche reflects the studio spirit it was born from- creative, distinctive, and unmistakably unique. Using filtered water, black and green tea, German beet sugar, and their proprietary liquid starter culture, Bouche ferments in closed stainless‑steel tanks with precise control over oxygen and temperature, without the use of a SCOBY. Once the ideal acidity is reached, the yeast is gently centrifuged to preserve active bacteria, and flavours are developed through maceration, drawing on techniques from beer and winemaking to build structure and depth. Their bottles unite art and fermentation: labels appear as fictional flowers, each representing its own character.
