Kombucha

Kombucha is a fermented tea drink made by combining green, oolong, or black tea with a SCOBY – a symbiotic culture of bacteria and yeast. During fermentation, the SCOBY transforms sugar into organic acids, creating natural acidity, gentle bubbles, and a lively, refreshing texture, while most of the caffeine disappears.
A second fermentation can introduce fruits, herbs, hops, or wood for extra depth. And modern producers increasingly work with herbal infusions, coffee, or even dealcoholized wine, resulting in kombuchas that are diverse, expressive, and full of character.
